organic & guilt-free banana chocolate pancakes!



What the fudge, right? A second food post in a week! But I can assure you that I have a really good reason for this. I got hit with a really bad sinus infection this week and it got so bad I had to call in sick today. So I figured I needed to eat good and get me some proteine. And that's where these pancakes came in! And since they were majorly delicious as well, I wanted to share them in this quick update. You know, before crawling up the stairs again and collapsing on my bedroom floor.

These pancakes are really easy and quick to make and you only need a few simple ingredients. All you need are two organic eggs, an organic banana, a small table spoon of high quality organic cocao and a tiny drip of olive oil. 

You throw the banana, eggs and cocao in a bowl and mash the ingredients up to make a smooth batter. It helps if you mush up the banana first and than mix the other ingredients into it. You can use a kitchen aid for this, but a fork works just as well. 

Once you have a nice and smooth batter you throw it in the pan and prepare them just like a regular pancake. You use a tiny bit of olive oil for this. I use a ceramic pan, so I could probably pull off not using any oil at all. But I just like it better this way. This batch makes about 4 - 5 pancakes depending on the size. 

And there is the very yummy result! I used some powdered sugar to sweeten them up a little bit more. I thought they were really good, easy to make and hopefully they will help me get my strength back soon! I'm just not the sitting at home being sick type of gal. Delicious Apple Crumble Apples!

 We just had one of those days yesterday. It was rainy and cold outside and we just wanted to hide away in our pj's all day. Now this doesn't happen to me very often. But every once in a while you just need a day without any obligations outside the house. So we searches the house for food and an activity to do and I realized we always have the ingredients to make an apple pie lying around. I had seen these cute apple pies in an apple all over the internet, but I hadn't seen them in the apple crumble version yet. So we made, we ate and now we share! 

So this is all you need to get started! Just open your kitchen cabinets. There's a 99% chance these ingredients will all be in there. Try it, I dare you!

4 apples
2 oz raisins (let them sit in some water for a little bit)
2½ oz plain flour
2 oz margerine (or butter)
2 oz light demerara sugar 
1 teaspoon of ground cinnamon

Start off by hollowing out the apples. I'm sure there are all kinds of tools available for this, but I just used a sharp teaspoon and it worked fine. Thow the pieces of apple in a bowl together with the drained raisins and a teaspoon of cinnamon. Mix them together and fill the apples with the mixture. 

Take another bowl and throw in the flower,the sugar and the butter and kneed them all together. Crumble the dough over the apples and slightly push it down. You don't want the crumbles to fall off in the oven. But the apples in an oventray and fill the tray with some water to make sure your apples don't wrinkle up like a couple of old grannies. Preheat the oven at 375 degrees and place the tray in the oven for about 20-25 minutes. 

And voila! Serve it with a some chai tea latte and some whipped cream and you got yourself a delicious little treat. It was hard to snap a picture of the end result without Charlotte's little greedy fingers in it though, but I guess that's a good sign! Haha! Bon appetit! Oh, and I gave the blog a new look today. Humble Crumble!


I'm back with something different this week. A yummy recipe! This is one of my absolute favorites at the moment and I have been making it atleast once a week for the last couple of months. We simply can't get enough of it! It's so quick and easy to make and it is absolutely delicious! Plus it's a way better altenative than pie or a piece of cake!

Ingredients
1 apple
2 pears
1 box of frozen forrest fruits (9 oz)
3½ oz  rolled oats
2 oz plain flour
1½ oz margerine (or butter)
1½ oz light demerara sugar
1 teaspoon of ground cinnamon

Now these measurements don't have to be very exact. If you add a little more of this and a little less of that, that's absolutely fine. It's pretty much impossible to mess this one up. Make it once and you can petty much eye ball it the next time.

Recipe
Chop up the apple and the pears and mix them together with the frozen forrest fruits and the ground cinnamon. After everything is mixed up, thow it into a slightly buttered oven dish.

Take the rolled oats, the flour, the margarine and the demerara sugar and knead the ingredients into a ball. Take the ball and crumble it over the oven dish.

Pop it into the oven for 50 minutes on 350 degrees and voila! You have an absolutely delicious treat! If you eat it warm it is absolutely delicious with a scoop of vanila ice-cream. If you eat it cold it's great with a bit of whipped cream on the side or in your morning yoghurt! Try and enjoy! You won't be disappointed!

Hot drinks for cold nights!

Eventhough I only have a miniscule role to play, I love being a part of the blogging community. How amazing is it that you get to connect with all these awsome and inspirational people from all over the world and be allowed to take a peek into their lives? It's really an endless ocean of information and inspiration that I just love to dive into. I have alot of different blogs on my readinglist and whenever I find a spare minute I love catching up on them. A little while ago I read a post about homemade chocolatemix here and I really fell in love with the idea. It was love at first sight but unfortunately the recipe was't really me. So I decided to throw in the stuff I like and make my own hot chocolatemix! I love how it turned out, I've already had 3 cups! :)

Here's what I used to make it. I used a high quality organic cacoa by Australian Homemade (but you can use any high quality brand) a low fat powdered milk, mini marshmallows, coffee creamer, chocolate fondue, ground cinnamon, jars, a bow and a tag (which you can find here).
Adding a tag comes in handy if you are planning to share your chocolate love with others.

I used mini marshmallows in different colors, which gives it such a playful look! I used glass jars so you can really see the sweet little pop of color it gives. So cute!

The recipe
8 tablespoons of low fat powdered milk
4 tablespoons of high-quality cocao
2 tablespoons of coffee creamer
2 tablespoons of chocolate fondue chips
1 teaspoon of ground cinnamon
5 tablespoons of mini marshmallows

I didn't add any sugar to the recipe because the marshmallows already add some sweetness to the drink and I didn't want to make it unnecessary unhealthy. But if you happen to have a sweet tooth, you can throw two teaspoons of sugar into the mixture! :) Mix all the ingredients together (except the mini marshmallows, you add those later) and you have your hot chocolatemix. You can chop up the chocolate chips, but I like the fact that it doesn't look like a perfect fine mixture. Its homemade and it's allowed to look the part! The chocolate fondue chips are made to melt easily, so it's not really necassary to chop them up anyway. Throw 3 tablespoons of mixture into a cup, poor hot water on it and stir well. This batch should be enough for about 5 cups. Finish it off by throwing a tablespoon of mini marshmallows on top. Voilá and enjoy!

High Teas and Maybes!


How good does this pictures look? And I don't mean quality wise. Besides the very present teeth marks on my phone, I'm pretty sure there is also baby drool on the camera lens. I meant what's in the picture.

This week it was time for our annual High Tea. Me, my mom, my aunt and my niece try to plan a little get-together once a year. Our weapon of choice happens to be a High Tea. I've done so many, but this was definitely one of my favorites. As you can see they served it with fresh mint tea. That was a first! And you'll never guess where we did this...at Ikea! Now I don't think they serve it everywhere, and it's definitely poorly advertised. But if you have an Ikea near you that offers this service, I very much recommend it!

We also brought Charlotte along and as you can see that also served it with a snack especially for her. The baby food was free of charge. Charlotte had so much fun! She loved to sit with us and be part of what the grown ups were doing. She was so proud and couldn't stop smiling and babbling. She was such a charmer!


We had a lovely afternoon and it obviously ended in some serious shopping. I'm stocking up for the holidays and the shopping will continue tomorrow! The only downer was that I was planning to take my new car. I'm looking for a new one and I thought I found the one for me a couple of days ago. I was so devastated when the car turned out to be a disappointment. So I'll have to continue my search for the perfect ride. Who knows, maybe I'll have some new car news to share really soon! Maybe!
